   Chocolate-raspberry is OUR thing.  It is one of the first desserts we shared on a date aboard the Spirit of Washington dinner train. The same train where we later declared our marriage vows.

God knew.  He carried us through the hard times.  He brought healing into our lives and into our marriage.  He set each of us free from the underlying causes of our pain . . . pain that caused each of us to act out in ways that hurt each other.  God never gave up on us and . . . thankfully . . . we never gave up on each other.

This fabulous dessert came from a Pampered Chef party and it is a favorite wherever we take it. It is a breeze to make with your favorite brownie mix. I prefer to use a dark chocolate mix and dark chocolate curls for garnish.

Serving Size: 1 square

Notes

To make chocolate curls, hold a vegetable peeler against the narrow side of a chocolate square. Using even pressure, push the blade away from you to create curls. Or, using a cheese grater, grate the chocolate square over the dessert.

Ingredients

  • 1 package (19.9 oz) brownie mix
  • 1/2 cup seedless raspberry jam
  • 2 cups fresh raspberries, or frozen whole raspberries without syrup, thawed and drained
  • 3 ounces white chocolate, melted
  • 2 packages (8 ounces each) cream sheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1 container (8 ounces) frozen whipped topping, thawed
  • Chocolate curls (optional)

Instructions

  1. Preheat oven to 350 F.
  2. Lightly spray bottom of 9x13 pan with vegetable oil spray.
  3. Prepare and bake brownie mix according to package directions; cool completely.
  4. Spread jam onto brownie.
  5. Reserve 1/2 cup of the raspberries for garnish; arrange the remaining 1-1/2 cups raspberries evenly over jam.
  6. In microwave safe dish, microwave chocolate on HIGH 1 minute; stir. Microwave an additional 30 seconds or until chocolate is completely melted when stirred; cool slightly.
  7. Meanwhile, combine cream cheese and powdered sugar in medium bowl; mix well.
  8. Gradually whisk in melted chocolate and milk.
  9. Fold in whipped topping; spread mixture carefully over raspberries.
  10. Refrigerate 1 hour or until firm.
  11. Cut into 15 squares.
  12. Garnish with reserved raspberries and chocolate curls, if desired.
  13. Store, covered, in the refrigerator.

    These look so delicious and thank you for sharing your recipe and I will certainly try it! You just have a beautiful blog and I’ve been strolling through it and see you once lived in the Washington state area. My daughter and her husband lived in Bellevue for a few years and that’s where my 1st grandchild was born there and we visited many times. Such a lovely area. Seems you’ve made a drastic move to the south. About 5 months ago we moved from Texas to upstate New York! Another drastic move but this time to be close to our grandbabies since they moved up here! Hope you’ll pop in to see me sometimes.

    Patti, that’s what love is all about, never giving up! I am not a huge chocolate fan, but I love raspberries and a little chocolate with them I like. Pinning your sweet recipe. You would like the raspberry choc. chunk muffins I made a while back. Will be sharing the recipe on the blog this week. Your dessert looks absolutely delicious and I love the chalkboard! “In 1965, Charles Schulz, a devout Christian and “In 1965, Charles Schulz, a devout Christian and creator of the Peanuts comic strip, was asked to create a Christmas special for CBS featuring the Peanuts Characters. He agreed with one requirement, that they allow him to include the story of the birth of Jesus. Although the stations executives were hesitant and tried to convince him otherwise, Schulz was insistent. As a result, for the past 50 plus years, millions of people have watched “A Charlie Brown Christmas” and heard the story of Jesus and “what Christmas is all about.”

It wasn’t until a few years back that I realized a “hidden message” in the film. Linus, a child who seems to have some insecurities as he carries a security blanket with him at all times. In fact, Linus NEVER drops his blanket, except once....

While sharing the message of “what Christmas is all about,” Linus drops his blanket at the exact moment he says the words, “fear not!”

In this seemingly innocent moment, Linus delivers a powerful reminder of the true meaning of Christmas. We are to “fear not”, for Jesus is born. We needn’t rely on material things for security, we have God with us, “Immanuel”, (Matthew 1:23) Jesus Christ, our Lord and Savior - the true meaning of Christmas.

Awhile back, someone informed me, indignantly so, that Linus picks up his blanket at the end of the speech so my interpretation must be wrong. Well, he was right, Linus does pick up his blanket at the end of his speech. However, he “drops” it again later... 

Amid big, bright, colorful, shiny artificial trees, Charlie Brown chose the least of these, a little, wooden tree with just a few branches. Shortly thereafter, Linus uses his blanket to wrap about the base of the tree and says, “Maybe it just needs a little love”. In that moment, the tree “awakens”, stands tall and firm. A reminder that no matter who we are, how many mistakes we’ve made, a “little love” can make all the difference.

Let’s strive to “fear not” (Luke 2:10) and “love one another” (John 13:34), not just at Christmastime, but the whole year through.”
